Tomato and Basil Tortellini Soup
Fall is my absolute favorite time of year! I love baggy sweaters, comfy boots, hot cocoa and bonfires! I also love cooking and enjoying comfort foods. Comfort foods to me this time of year is soup! I made this tomato and basil tortellini soup for the first time the other night, and it was fantastic! It’s flavorful, hearty and easy to make! I thought I’d share it just in case you are looking for a new recipe!
Ingredients:
- 1/4 cup fresh basil
- 1 tsp Spice Merchants Garlic Powder
- 1 tsp Minced Garlic
- 1/2 tsp Spice Merchant’s Garlic Salt
- 1/2 white or purple onion
- 5 cups Chicken Stock
- 1 jar pasta sauce
- 16 oz three cheese tortellini
- 1/2 tsp Spice Merchants pepper
- 1 tsp Spice Merchants Black Truffle Salt
- 1 tbsp Olive Oil
- 3/4 cup half and half
- Parmesan cheese to taste
- 1/2 cup skim milk ounce can diced tomatoes
- fresh basil for garnish
Directions:
- Combine onion, garlic and olive oil in a 6-quart soup pot and simmer over medium heat until onions are translucent
- Add in fresh basil, milk, half and half, chicken stock, pasta sauce and diced tomatoes into mixture. Stir until all ingredients are combined
- Add in the Black Truffle Salt, Pepper and Garlic Salt into mixture
- Simmer mixture for 20 minutes
- Add tortellini into mixture and simmer for another 15-20 minutes
- Serve with fresh basil and Parmesan cheese as garnish
