Tomato and Basil Tortellini Soup

Fall is my absolute favorite time of year! I love baggy sweaters, comfy boots, hot cocoa and bonfires! I also love cooking and enjoying comfort foods. Comfort foods to me this time of year is soup! I made this tomato and basil tortellini soup for the first time the other night, and it was fantastic! It’s flavorful, hearty and easy to make!  I thought I’d share it just in case you are looking for a new recipe!

Ingredients:

  • 1/4 cup fresh basil
  • 1 tsp Spice Merchants Garlic Powder
  • 1 tsp Minced Garlic
  • 1/2 tsp Spice Merchant’s Garlic Salt
  • 1/2 white or purple onion
  • 5 cups Chicken Stock
  • 1 jar pasta sauce
  • 16 oz three cheese tortellini
  • 1/2 tsp Spice Merchants pepper
  • 1 tsp Spice Merchants Black Truffle Salt
  • 1 tbsp Olive Oil
  • 3/4 cup half and half
  • Parmesan cheese to taste
  • 1/2 cup skim milk ounce can diced tomatoes
  • fresh basil for garnish

Directions:

  • Combine onion, garlic and olive oil in a 6-quart soup pot and simmer over medium heat until onions are translucent
  • Add in fresh basil, milk, half and half, chicken stock, pasta sauce and diced tomatoes into mixture. Stir until all ingredients are combined
  • Add in the Black Truffle Salt, Pepper and Garlic Salt into mixture
  • Simmer mixture for 20 minutes
  • Add tortellini into mixture and simmer for another 15-20 minutes
  • Serve with fresh basil and Parmesan cheese as garnish

One thing I recommend is to make sure that you completely blend the Matcha to prevent clumps in your latte. Mediterranean Zesty Lime Turkey Wrap

With the right ingredients, you can recreate a recipe that will take you to an exotic island in the Mediterranean. Enjoy the robust flavors of the Mediterranean with this perfect recipe full of flavor.

Ingredients:

  1. 1 box Near East Zesty Lemon Quinoa
  2. 1 package of ground Chicken or Turkey
  3. 1 tablespoon fresh garlic
  4. 1/2 can corn
  5. 1 1/2 can black beans
  6. 1 1/2 teaspoon Spice Merchants Rosemary Rapture
  7. 1 1/2 teaspoon Spice Merchants Black Truffle Salt
  8. 1 1/2 teaspoon Spice Merchants Dried Cilantro
  9. 1 1/2 teaspoon Spice Merchants Greek Seasoning with Feta
  10. Tortillas
  11. Tomatoes
  12. Fresh Lemon Juice Sprinkled
  13. Hummus
  14. Optional: Fresh cilantro, feta cheese

Directions:

  1. Cook the box of Near East Zesty Lemon Quinoa according to the directions on the box
  2. Ground the turkey or chicken and cook it until done
  3. Add black beans, spices, lemon juice and corn to ground turkey
  4. Cut up veggies and set aside
  5. Lay tortilla flat and spread hummus  generously on it
  6. Place ground turkey or chicken, black beans, corn and spices on top
  7. Top off with fresh cilantro, tomatoes and feta cheese
  8. Enjoy!

Not only is this recipe healthy, but it’s favorable and so delicious.

RECIPE: Quinoa Greek Salad w/ Tomatoes, Cucumber, Black Beans & Feta

This is my go-to meal. It’s healthy, easy to make and doesn’t require hours and hours laboring over a hot stove.

Instructions:

  1. In a medium saucepan, combine quinoa and spices (as directed) in water and bring to a boil. Reduce heat to low and cover. Cook until water is absorbed- 15 to 20 minutes. Fluff with fork and set it aside to cool off.
  2. Cut up tomatoes, cucumber and green onion and set aside in a bowl.
  3. Mix in cumin, black beans, minced garlic and oregano into cooled quinoa and stir.Mix in a little bit of olive oil to help separate the quinoa.
  4. Once the quinoa has cooled to room temperature, add in the veggies, fresh cilantro and feta cheese. Serve

  • 1 cup uncooked quinoa
  • 2 1/3 cups water
  • 1/2 cup of diced green onions
  • 1 cup quartered cucumber rounds
  • 1/2 cup feta cheese
  • 3 tbsp extra-virgin olive oil
  • 3/4 tsp dried oregano
  • 1/2 tsp salt & ground pepper
  • 3/4 tsp of cumin
  • 1 tbsp ground garlic

**As a busy mom, I cheat and buy boxed quinoa from time to time. The more fresh the ingredients, the tastier. Enjoy!

New Fall Recipe

Now I surely don’t claim to be an amazing cook or anything like that nor do I claim toalways eat healthy, but I do certainly enjoying cooking and creating new meals. The one I made tonight is for Jason to enjoy since he is quickly losing weight from lack of eating and/or eating enough food. He is busy (like myself) so sometimes it’s hard to eat a hearty meal on the go. I have vowed to start cooking for him more during the week in order to help him stop losing weight. This meal was partially an existing recipe but I added my pizzazz into it. The recipe is actually called Wagonwheel Beef Soup which consists of Wagonwheel pasta, ground beef, onion, beef broth, spaghetti sauce and kidney beans. Originally when I went to make this recipe I was shocked that I couldn’t find the Wagonwheel pasta. What’s a recipe without its signature pasta? Oh well, I settled for bow tie pasta as I believe those are more or at least equally enjoyable and fun. I added a bit more spices and veggies into my recipe since Jason is lacking on eating his recommended veggie intake each day. Hopefully he enjoys it! I, however, haven’t tried it, so as soon as he lets me know how it tastes this time round, I’ll make sure to pass it along!!
