Baked Chicken Tacos
- 1/2 lb chicken (I used rotisserie)
- 1/2 cup chopped tomatoes
- 1/2 cup chopped purple onion
- 1 8 oz can refried beans
- 1/2 cup queso
- 1/4 cup chopped green onion
- 1 oz taco seasoning
- 10 stand and stuff taco shells
- 2 cups Mexican blend cheese
DIRECTIONS:
- Preheat oven to 350F
- Spray 9×13 baking pan with nonstick cooking spray
- Add onion to skillet and olive oil. Cook until onion is translucent.
- Stir in tomato and green onion.
- Place taco shells in baking pan
- Spoon 1 tablespoon of beans into the bottom of each shell
- Top with chicken, taco seasoning and saute onion and tomato mixture to top
- Scoop on some queso
- Sprinkle each taco with fresh green onion and more cheese
- Bake for 8-10 minutes or until cheese is fully melted and edges are browned
- Remove from oven and top with your favorite items such as cilantro, taco sauce, sour cream or salsa.
