Chewy Banana Chocolate Chip Oatmeal Cookies

Have browning bananas? Love banana bread? Then this recipe is perfect for you! These chewy Banana Chocolate Chip Oatmeal Cookes are tasty. They are made with ripe bananas and oats that add lots of chewiness and then paired with chocolate chips making them the perfect dessert for anyone.

The bananas used for this recipe should be very ripe so that they can be easily mashed and mixed well with the other ingredients.

Ingredients:

  • 1 cup butter (2 sticks) softened
  • 1/2 cup sugar
  • 3/4 cup brown sugar
  • 1 tsp. vanilla extract
  • 1 cup softened  bananas
  • 1 cup semi-sweet chocolate chips
  • 2 eggs
  • 1 1/2 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 2 cups of all-purpose flour
  • 3 cups old-fashioned oats

Instructions:

  1. Combine the dry ingredients (flour, spices, baking soda, salt, sugar & chocolate chips) in a large bowl. Omit the oats for now.
  2. Combine the wet ingredients (butter & vanilla extract). Omit eggs and banana for now.
  3. Add the above dry ingredients with wet ingredients above, until well mixed.
  4. Mash bananas
  5. Combine eggs and banana to combined wet and dry ingredients.
  6. Line baking sheet with parchment paper and scoop cookies into small balls
  7. Cook for 10-12 minutes at 370 degrees
