Baked Chicken Tacos

In my opinion, tacos are never a bad idea. They are the perfect quick weeknight dinner, and these baked chicken tacos are hands down the best recipe ever! Not only are they freaking delicious, but they are so incredible to make.

INGREDIENTS:
  • 1/2 lb chicken (I used rotisserie)
  • 1/2 cup chopped tomatoes
  • 1/2 cup chopped purple onion
  • 1 8 oz can refried beans
  • 1/2 cup queso
  • 1/4 cup chopped green onion
  • 1 oz taco seasoning
  • 10 stand and stuff taco shells
  • 2 cups Mexican blend cheese

DIRECTIONS:

  • Preheat oven to 350F
  • Spray 9×13 baking pan with nonstick cooking spray
  • Add onion to skillet and olive oil. Cook until onion is translucent.
  • Stir in tomato and green onion.
  • Place taco shells in baking pan
  • Spoon 1 tablespoon of beans into the bottom of each shell
  • Top with chicken, taco seasoning and saute onion and tomato mixture to top
  • Scoop on some queso
  • Sprinkle each taco with fresh green onion and more cheese
  • Bake for 8-10 minutes or until cheese is fully melted and edges are browned
  • Remove from oven and top with your favorite items such as cilantro, taco sauce, sour cream or salsa.
  • Enjoy!
