CHICKEN ALFREDO LASAGNA ROLL UPS
These Chicken Alfredo Lasagna Roll Ups are an instant family favorite. They’re easy to make, and they are the perfect dinner solution for busy weeknights. They’re creamy, super cheesy, lasagna rolls are filled to the brim with shredded chicken and ricotta cheese then topped with creamy alfredo sauce. In addition to the alfredo sauce topping the roll ups, parmesan and mozzarella cheese is also sprinkled on top. The whole family really enjoyed these!
Ingredients:
- 10 Lasagna Noodles
- 3 cups of Shredded, Cooked Chicken (rotisserie works great for this!)
- 16 ounces of Ricotta Cheese
- 1 teaspoon salt
- 1 teaspoon Italian Seasoning
- 1/2 teaspoon Onion Powder
- 1/2 teaspoon Garlic Powder
- 1/2 cup of Alfredo Sauce, jarred
- 2 cups of Mozzarella cheese, shredded
- 1 cup Parmesan cheese, shredded
How to make Chicken Alfredo Lasagna Roll Ups
- Preheat oven to 350 degrees.
- In a large mixing bowl, combine the shredded chicken (I use rotisserie!), ricotta cheese, and the dry ingredients which include the salt, onion, garlic powder and Italian seasoning.
- Cook the lasagna noodles as recommended on the packaging.
- Once booked, lay the lasagna noodles on a flat surface and spread approximately 3 ounces of chicken mixture to each noodle. Leave about 1/3 of the noodle bare.
- Top the chicken mixture with 1/2 tablespoons of Alfredo sauce.
- Roll the noodle up, starting at the end of the noodle rolling towards the bare end of the noodle.
- Before placing roll-ups to cooking plan, spread 1/4 cup of alfredo sauce to the bottom of the pan.
- Place each roll-up into the casserole dish.
- Pour the remaining Alfredo sauce over the lasagna roll ups.
- Top the lasagna roll ups with shredded mozzarella and parmesan cheese.
- Cover the dish with aluminum foil and bake for 20 minutes.
- Remove the aluminum foil and continue to bake for 10 minutes or until the cheese is melted and bubbling.
