Chocolate Chip Oatmeal Cookies

These cookies have easily become one of my favorites. It’s funny how a bit of oatmeal can help you feel a little less bad about eating cookies, am I right? Since having surgery a few weeks ago, I’ve been baking a little bit more, because why not? I have never ever been good at baking cookies. Literally, if there was an arch enemy for baking directly correlated to me, it’d be cookies. Butttttt, these came out magical. They were even 5 year old approved, which if you have little children who approve of anything you make, it’s the equivalency of winning the lottery!

Ingredients

  • 1 c. unsalted butter, at room temperature
  • 1 cup light brown sugar
  • 1/2 c granulated sugar
  • 1 large egg, at room temperature
  • 1 large egg yolk, at room temperature
  • 1 tablespoon vanilla extract
  • 2 cups flour
  • 1 cup of oats
  • 1 teaspoon baking powder
  • 1 teaspoon of baking soda
  • 1 teaspoon salt
  • 3 cups of semisweet chocolate chips

Instructions

  1. Pre-heat oven to 325 degrees
  2. Line several cookie sheets with parchment paper
  3. Beat together egg, egg yolk and vanilla
  4. Combine and whisk together flour, oats, baking powder, baking soda and salt
  5. Add to butter mixture
  6. Stir in chocolate chips
  7. Scoop dough on prepared cookie sheets leaving about 1 1/2″ to 2″ between cookies
  8. Bake cookies for 12-17 minutes until they’re golden brown
  9. Remove and let cool
  10. Enjoy

 

Tips

  1. Be sure to use unsalted butter, at room temperature
  2. Eggs also need to be at room temperature
  3. Recipe made 48 cookies, clearly depending on size of cookies, it could yield more or less
