Chocolate Chip Pumpkin Banana Muffins
Listen, I’m not the pumpkin-spice everything kind of gal, but I do love me some chocolate chip pumpkin banana muffins. These are moist, easy to make and jam-packed with flavor. They are the perfect treat to help you experience all the Fall feels.
Ingredients:
- 1/3 cup coconut oil
- 1/3 cup maple syrup or honey
- 2 eggs
- 2 ripe bananas
- 1/4 cup milk
- 1 cup pumpkin puree
- 1 tsp. vanilla extract
- 1/2 tsp. salt
- 1 tsp. baking soda
- 2 tsp. pumpkin pie spice
- 1/2 tsp. nutmeg
- 1/2 tsp. cinnamon
- 1 3/4 cups of flour (all purpose or white)
- 1/2 cup of chocolate chips (optional)
- brown sugar (optional)
Directions:
- Mash rip bananas in a large bowl
- Mix all wet ingredients in with the bananas (includes coconut oil, maple syrup or honey, eggs, pumpkin, milk and vanilla extract)
- Add in the pumpkin puree, baking soda and salt and stir until all ingredients are well mixed
- Mix in flour, but don’t over-mix
- Mix in the chocolate hips
- Pour into well-sprayed muffins cups (I prefer the silicone cups, but used the liners)
- Top muffins with a light coating of brown sugar
- Bake at 350 degrees for 20-23 minutes (stick a toothpick into them and if it comes out clean, they’re ready!)
- Let cool for 10 minutes and enjoy!
