Fiesta Chicken Casserole
This delicious fiesta chicken casserole is filled with tender chicken, pasta, black beans, corn all mixed together in a cheesy chicken casserole. This meal is quick and easy to make. Plus, it’s so dang good. I use rotisserie chicken, but you can choose shredded chicken or even substitute beef or pork if you choose.

Cook Times: 20 Minutes
Total Time: 35 Minutes
Ingredients:
- 2 cups uncooked pasta (I used cavatappi)
- 1 cup sour cream
- 1 cup salsa (I use fresh salsa, not salsa from a jar)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin (or taco seasoning)
- 1 can corn, drained
- Cilantro to taste
- 1/2 cup green onion
- 1 can black beans, drained
- 2 cups shredded rotisserie (or chose of meat)
- 2 cups shredded cheese
Instructions:
- Preheat oven to 350 degrees
- Spray a 9 x13 baking dish and set aside
- Cook pasta according to packaging
- While pasta cooks, combine salsa, cumin, sour cream, garlic and onion powder and green onion in a large mixing bowl
- Add corn, black beans and chicken into the mixture
- Add in 1 cup of cheese
- Pour into the baking sheet and sprinkle the remaining cheese on top
- Cover with foil and bake for 20 minutes
- Pull out and let cool
- Top it with additional green onion and cilantro to taste
