Fiesta Chicken Casserole

This delicious fiesta chicken casserole is filled with tender chicken, pasta, black beans, corn all mixed together in a cheesy chicken casserole. This meal is quick and easy to make. Plus, it’s so dang good. I use rotisserie chicken, but you can choose shredded chicken or even substitute beef or pork if you choose.

Here’s what you need and here’s how you make it:

Prep Time: 15 Minutes

Cook Times: 20 Minutes

Total Time: 35 Minutes

Ingredients:

  • 2 cups uncooked pasta (I used cavatappi)
  • 1 cup sour cream
  • 1 cup salsa (I use fresh salsa, not salsa from a jar)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin (or taco seasoning)
  • 1 can corn, drained
  • Cilantro to taste
  • 1/2 cup green onion
  • 1 can black beans, drained
  • 2 cups shredded rotisserie (or chose of meat)
  • 2 cups shredded cheese

Instructions:

  1. Preheat oven to 350 degrees
  2. Spray a 9 x13 baking dish and set aside
  3. Cook pasta according to packaging
  4. While pasta cooks, combine salsa, cumin, sour cream, garlic and onion powder and green onion in a large mixing bowl
  5. Add corn, black beans and chicken into the mixture
  6. Add in 1 cup of cheese
  7. Pour into the baking sheet and sprinkle the remaining cheese on top
  8. Cover with foil and bake for 20 minutes
  9. Pull out and let cool
  10. Top it with additional green onion and cilantro to taste
