Roasted Garlic White Chicken Lasagna Soup
Winter is in full swing here in West Michigan. It’s bitter cold, and the wind is harsh, but that makes a warm bowl of creamy, comforting soup that much better. This roasted garlic white chicken lasagna is jam-packed with flavor. It’s easy to make, and it fills the house with amazing scents!
This soup is not only filling, but it’s truly fun to make. I enjoy roasting garlic, and it really adds so much additional flavor to this soup.
Ingredients:
- 1/2 cup roasted garlic
- 1-16.9 ounce of alfredo sauce
- 1 1/2 pound of chicken (I used rotisserie)
- 1 tablespoon all-purpose flour
- 1 tablespoon olive oil
- 3 tablespoons of butter
- 1/2 cup minced onions
- 4 cups chicken broth
- 2 cups half and half
- 1 teaspoon garlic powder
- 1 teaspoon basil
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes
- 1/2 cup fresh parmesan cheese
- 10-12 lasagna noodles, broken up into 4-5 pieces
- 2 tablespoons fresh parsley
Directions:
- Start by roasting the garlic. Slice off the top of the head of garlic to expose the cloves and peel off as many layers as possible. Drizzle with olive oil and a pinch of salt and pepper. Wrap the garlic in a piece of aluminum foil and place on a baking sheet. Road in the oven for 40-45 minutes or until garlic is tender. 5 or 6 heads of garlic will get you about 1/2 cup.
- Once the garlic is done, throw it into a blender with the jar of alfredo sauce and blend and set aside.
- Add the chicken to a pot and sauté for 5 minutes in some olive oil.
- Add in the chicken broth and half and half.
- Next, mix in the butter and mix together.
- Add in the seasonings and other dry ingredients.
- In a separate pot, cook the lasagna noodles.
- Add the roasted garlic and alfredo sauce combination to the soup and stir together.
- Once the noodles are appropriately cooked, add them to the soup and let cook for a few minutes.
- Add some fresh parsley and parmesan cheese to the top and serve.
We serve some fresh garlic bread and olive oil with spices for a side. A nice little side salad would be a nice additional too.
