Loaded Burger Bowls

These loaded burger bowls are Whole30, paleo and low carb, yet filling and so healthy.  They’re the perfect alternative to the traditional lettuce wrap and easy to make. With the combined veggies, bacon, burger, guacamole and ‘special sauce’, it’s jam-packed with flavor.

If you’re not familiar with the concept of a burger bowl, let me fill you in. A burger bowl is the equivalency of a burrito bowl or taco salad. Except with a burger bowl, we take all the kick-butt ingredients we love about a burger, strip it down and layer it onto a heaping bed of lettuce.

Picture the savory beef, avocado, crispy bacon, salty pickles and that special, tangy sauce all on a bed of lettuce topped with fresh veggies. It’s really a beautiful sight.

Ingredients:

Burger Bowl Meat

  • 1 pound of ground beef (can substitute other meat such as turkey or chicken)
  • 4 teaspoons garlic powder
  • 1 teaspoon coconut oil
  • 1/2 teaspoon salt

Burger Bowls

  • 2 small heads of lettuce or lettuce of choice
  • 1/2 cups pickles or more to taste
  • 1 cup of cherry or grape tomatoes halved
  • 1 cup diced red onion
  • 8 slices of turkey bacon cooked til crisp
  • 2 avocados peeled and pitted
  • 1/2 teaspoon salt
  • 1/2 tablespoon lemon juice

Special Sauce

  • Whole30 Special Sauce

OR

  • 2 tablespoonsnwhole30 approved ketchup
  • 1/2 whole30 approve mayonnaise
  • 1 tablespoon coconut aminos
  • 2 teaspoons pure maple syrup
  • 1 tablespoon dill pickle relish
  • 2 teaspoons dried minced onion
  • pinched crushed pepper
  • pinch of salt

Instructions:

  1. In a medium bowl, mix together the beef, salt and garlic powder. Heat the coconut oil in the skillet over medium heat, then add beef until it is browned and crumble.
  2. Prepare the veggies by cutting them up and setting aside.
  3. Mash up the avocado together with the lemon juice and salt.
  4. Make the special sauce OR make sure to purchase the Whole30 special sauce.
  5. When the beef is brown and has been crumbled, add the onions and cook until lightly charred.
  6. Assemble burger bowls by first starting with a layer of romaine lettuce. Place 1/4 of the cooked beef mixture on center. Arrange remaining veggies (tomatoes, pickles, red onions, etc. ), bacon and guacamole to lettuce and beef. Top with guacamole and special sauce.
