Tuscan Sausage Soup (Keto, Whole 30 + Paleo)

This savory and creamy Tuscan Sausage Soup is filled with all the things to warm you up this winter. It’s loaded with sausage, spinach, garlic, Italian herbs and spices, tomatoes, coconut milk, chicken broth and more, yet it’s easy to make!

Soup season is the BEST season in my opinion, so I’m here for it!

INGREDIENTS:

  • 1 1/2 pounds Whole 30 approved ground sausage
  • 6 cups  chicken broth (I prefer Kettle & Fire Bone Broth)
  • 2-3 cups of fresh baby spinach
  • 1 tablespoon olive oil
  • 1 medium red or yellow onion (I prefer red)
  • 1 cup canned unsweetened coconut milk
  • 1/4 cup nutritional yeast
  • 1 cup sundried tomatoes (or your choice of tomatoes)
  • 1 teaspoon Italian seasoning (I prefer Spice Merchants blend)
  • 1 tablespoon minced garlic
  • 1/3  cup of dairy free cream cheese (Kite Hill for Whole 30)
  • Fresh Basil to taste
  • Black Truffle Salt & Pepper to Taste (Again, prefer Spice Merchant blends)

DIRECTIONS:

  1. In a medium pan or skillet, add the olive oil, garlic, sausage and onion and all are cooked thoroughly
  2. Remove and drain the meat so the grease can drain
  3. In a large pot, added the above cooked ingredients with the chicken broth, nutritional yeast, tomatoes, coconut milk, dairy free cream cheese, Italian seasoning and salt and pepper.
  4. Allow these ingredients to cook together until the mixture becomes creamy. Make sure the cream cheese  is completely melted and mixed throughout.
  5. Cook for approximately 30 minutes
  6. Add in spinach and fresh basil to taste.
  7. Let simmer for 5-10 minutes, then enjoy!

As I said earlier, soup is my love language this time of year (Hello, Michigan!). This soup is healthy, easy-to-make and jam-packed with flavor!
